Oleoresin capsicum (OC) is an oily extract of pepper plants of the genus Capsicum. It is also the principal active ingredient in OC spray and is a mixture of complex soluble phenols known as capsaicinoids. Capsaicin ( trans -8-methyl- N -vanillyl-6-nonenamide) and dihydrocapsaicin make up 80–90% of OC.

Benzyl formate, also known as benzyl methanoate or BZO, belongs to the class of organic compounds known as benzyloxycarbonyls. These are organic compounds containing a carbonyl group substituted with a benzyloxyl group. Benzyl formate is slightly soluble (in water) and an extremely weak basic (essentially neutral) compound (based on its pKa).

Eugenol /ˈjuːdʒɪnɒl/ is an allyl chain-substituted guaiacol, a member of the allylbenzene class of chemical compounds.^[2] It is a colorless to pale yellow, aromatic oily liquid extracted from certain essential oils especially from clove, nutmeg, cinnamon, basil and bay leaf.^[3][4][5][6] It is present in concentrations of 80–90% in clove bud oil and at 82–88% in clove leaf oil.^[7] Eugenol has a pleasant, spicy, clove-like scent.^[8] The name is derived from Eugenia caryophyllata, the former Linnean nomenclature term for cloves. The currently accepted name is Syzygium aromaticum.^[9]

Anisic aldehyde, CgHgOj, is a methyl ether of para-oxy-benzaldehyde, which is found to a small extent in the oils of fennel and aniseed. It is manufactured on an extensive scale artificially, and is the basis of all the perfumes of the hawthorn or May blossom type. It is known commercially as aubepine.

Capric acid, also known as decanoic acid or decylic acid, is a saturated fatty acid, medium-chain fatty acid (MCFA), and carboxylic acid. Its formula is CH 3 (CH 2) 8 COOH. Salts and esters of decanoic acid are called caprates or decanoates.

Ethyl cinnamate is the ester of cinnamic acid and ethanol. It is present in the essential oil of cinnamon.^{[citation needed]} Pure ethyl cinnamate has a "fruity and balsamic odor, reminiscent of cinnamon with an amber note".^[1]
